Some of us wait all year for asparagus season. Here it is! Putting it on pizza with other spring delights such as eggs and fresh pecorino cheese is a real treat.
1 bunch of medium size asparagus
Shaved pecorino fresco (or other salty, nutty soft cheese)
Prepare the asparagus: snap off hard bottoms, wash and peel ends so that they are roughly the same size. Blanch for 2 minutes. Run cold water over to cool. Toss with olive oil and salt.
Roll out Mom's Pizza Dough on a lightly oiled baking sheet shaping into an oval. Brush with olive oil. Arrange asparagus and shaved cheese. Bake on the bottom rack of a 500 degree oven for 8-10 minutes until golden brown.
If adding the egg, crack on top of the pizza 2 minutes before the pizza is done. The egg will look undercooked. Do not wait until it looks cooked because it will turn to rubber. The egg should be running.
