It's that time of the year again. Back to school, back to making lunches. Maybe your even packing a lunch for yourself these days.
Are you in a rut already? We all know that it doesn't take long. Nothing can be more frustrating then trying to think up new ideas every week.
Let Mom's Pizza Dough help. Below are five ideas for brown bag lunches. You can make a bunch and freeze them or use up a bag of dough making lunch for the whole family.
Mini Pizzas
Mini pizzas make a perfect lunch for kids and adults. You can put different toppings on each depending on what everyone likes to eat.
The pizza in the photo above is made with leftover chicken, sauteed apples and a mixture of cheddar and fontina cheese.
Prep Instructions:
On a floured work surface, divide a bag of Mom's Pizza Dough into 8 pieces. Roll out each piece into 3 inch circles. Transfer to baking sheet. Top and bake for 5-7 minutes on the bottom rack of a 500 degree oven.
If you don't want to use them all, you can freeze them and take them out as needed. They will keep for about 1 month in the freezer.
Focaccia Sandwich
Give an old standard new life. Make focaccia bread with Mom's Pizza Dough and cut it up into squares for sandwiches. Make it a sandwich you can't wait to bite into.
Prep Instructions:
Brush an 8 inch square Pyrex dish with a generous amount of olive oil. Spread out a bag of Mom's Pizza Dough. Put more olive oil on top and make lots of holes all over with your fingers. (click here for more detailed instructions.)
At this point you can add chopped rosemary and salt or other herbs if so desired.
Bake on the bottom rack of a 500 degree oven for 8-10 minutes. Remove from dish and allow to cool on a wire rack before cutting.
Cinnamon and Sugar Apple Galette
This could be a snack, breakfast or lunch. Don't put too much sugar so it won't be so sweet.
Prep Instructions:
Cut up apples. Saute in a little butter or olive oil for a couple of minutes, until tender. Toss apples with a little cinnamon and sugar.
On a floured work surface, divide a bag of Mom's Pizza Dough into 8 pieces. Roll out each piece into 3 inch circles. Transfer to baking sheet. Top with apple mixture and fold over edges. Brush edges with milk. Bake for 5-7 minutes on the bottom rack of a 500 degree oven.

Mini Pigs in a Blanket
I have had a fantastic response to my pigs in a blanket recipes so I decided to try it one more way. How about minis!
Prep Instructions:
On a floured work surface, divide a bag of Mom's Pizza Dough into 16 pieces.
Cut up hot dogs or use a package of mini sausages (I used Aidell's chicken apple minis). Wrap dough around sausage and pinch closed.
Brush with olive oil and bake on the bottom rack of a 500 degree oven for 7 minutes.
You could make up the whole package of sausages and freeze the left overs for up to 1 month.
Ham and Cheese Hot Pockets
This is my favorite recipe of the five. I have been "testing" them for lunch all week.
Prep Instructions:
On a floured work surface, divide a bag of Mom's Pizza Dough into 8 pieces. Roll out each piece into 3 inch ovals. Put diced ham and shredded cheddar cheese in the middle. Roll up, wrap the ends under and pinch seems closed.
Transfer to baking sheet. Brush with olive oil. Bake for 7-10 minutes on the bottom rack of a 500 degree oven.
