This recipe for veggie pizza was in much need of updating. While the foundation of the recipe was solid, it needed a little help. The crust was Pillsbury crescent rolls and the spread was made of cream cheese, mayonnaise and a packet of ranch dressing mix. What a trio!
It was easy to update the recipe making it healthier and more for how we eat today. You can really use any veggies or even fruit you have on hand. It will make a great appetizer at your next party.
Veggie Pizza
5 oz. cream cheese
2 oz. goat cheese
1 teaspoon grated Parmesan cheese
1 Tablespoon dill, chopped
1/2 cucumber, seeded and chopped
1 ear of fresh corn
1/4 cup red onion, chopped
1/2 cup cherry tomatoes cut into slices
Olive oil
course sea salt
Roll out one package of Mom's Pizza Dough to about 1/2 inch thickness on a lightly oiled baking sheet.
Using your fingers, make indents all over the dough. Spread a lot of olive oil on the dough, filling the holes. Sprinkle sea salt on top.
Bake in a 500 degree oven on the bottom rack for 8-10 minutes, until nicely browned. When the pizza is done, remove from oven and allow to cool. While the crust is cooling, you can make the spread and chop the veggies.
Mix together until somewhat creamy, either using a fork or electric mixer, the cream cheese, goat cheese and 1/2 of the dill. When cool, spread the mixture on the pizza crust forming a thin layer. Not too much as it will be hard to slice and it will overpower the veggies. Top with veggies. Sprinkle remaining dill on top. Cut into slices and serve.
Fruit also makes a great addition to this pizza. The sweetness nicely complements the cream cheese, goat cheese spread.
Tomato Peach Rosemary Pizza
5 oz. cream cheese
2 oz. goat cheese
1 teaspoon grated Parmesan cheese
1 large peach, peeled and chopped
2 small to medium tomatoes, chopped
(use different colors for a nice effect)
1 Tablespoon rosemary, chopped
squeeze of lemon
dash of olive oil
Follow the instructions above for baking the crust and making the cheese spread.
Mix together the peach, tomato, lemon and olive oil. Spread out on top of the pizza and finish with the remaining rosemary.
